Papas a la huancaína a dish consisting of sliced boiled potatoes, served on a bed of lettuce with a slightly spicy cheese sauce with olives. For 6 people:

Ingredients:

  • 5 fresh yellow peppers
  • 2 cloves of garlic
  • 400 g (0.18 lb) of fresh cheese
  • 1/2 cup of vegetable oil
  • 2 hard-boiled eggs
  • 4 black olives
  • 1 kg (2.2 lb) of potatoes
  • Lettuce
  • Salt

Preparation:

Take out the seeds from the yellow pepper. Clean it all and wash it.

Heat a little of vegetable oil in a pan and fry the cut yellow peppers and the whole garlics.

Beat this preparation and add the cheese and the oil, beating until it gets a cream. If it’s too much dense, you can add a little of milk.

Serve over cooked potatoes cut in halves. Decorate with sliced eggs, olives and lettuce.
