Chicha Morada

It’s a delicious beverage prepared from a base of boiled purple maize to which are added chunks of pineapple, sugar, and ice as it cools. Not to be confused with the fermented beverage chicha de jora.
Ingredients:
- 3/4 Kg (0.83 lb) of purple maize
- 1 big pineapple
- 4 limes
- 1 cup of sugar
- 4 cloves
- 3/4 Kg (0.83 lb) of apples
- 1 stick of cinnamon
- 4 1/2 liters of water
Preparation:
Boil the purple maize, the skins of the apples and the pineapple, the cinnamon and the cloves with 3 liters of water. Cook covered on a low flame for 45 minutes. Strain and put the liquid apart.
Boil the skins again with 1 1/2 liter more of water on a low flame, covered, for another 45 minutes (patience! the good things don’t arrive promptly…)
Strain and add it to the previous liquid. Add sugar and the limes’ juice.
Serve cold, with ice if you want.
Little things to consider:
- Add the limes’ juice and the sugar only to the quantity of chicha you’re going to drink.
- You can store the chicha not mixed in the refrigerator many days.
- Optional: You can cut the pulp of the apples and pinapples in very little pieces and add it to the mixed chicha.
- Some people make a little variations: with the purple maize, the skins, the cinnamon and the cloves in the first preparation, you can add a quince cut in four.
