This kind of ham is originary from the north of Peru. The pork came with the spanish conquerors and the Jamón del PaÃs born from the union of both cultures. Although it has another applications, its main use is for making the Butifarras.
Ingredients:
- 1 Kg (2.2 lb) of pork loin
- 4 cups of water
- 10 cloves of garlic, grounds
- 1 tablespoon of ground achiote/annatto
- 1/4 teaspoon of cumin
- 1/4 teaspoon of ground oregano
- 1 small onion in four pieces
- 1 tablespoon of salt
- 3/4 tablespoon of pepper in powder
Preparation:
Put all the ingredients in a pot. Boil covered on a low flame for one hour. If the loin is thin, the time can be shorter.
Serve in slices with onion sauce. Try this ham with Butifarras!
