
This is a salad with an odd name. Soltero is the word in spanish for “single”, a man not married; therefore, it would be “single of cheese” – I know, I don’t understand it either, but there’s no need to think about it: you’ll love this salad. It contains as well as broad beans and cheese, onions, tomatoes, fresh cheese, corns and olives. This recipe will make happy to 6 people.
Ingredients:
- 1/4 kg (0.55 lb) of onions
- 1/4 kg (0.55 lb) of tomatoes
- 1/2 kg (1.1 lb) of fresh cheese
- 3 corns
- 1/2 kg (1.1 lb) of black olives
- 1/2 kg (1.1 lb) of green broad beans
- 1 rocoto pepper
- Parsley, chopped
- Salt
- Pepper
- Vegetable oil (or olive oil, if you want)
- Vinegar
Preparation:
Cook the broad beans and the corns in a pot. When the corn is ready, let it cool down and remove the kernels.
Chop the cheese, the olives, the onions (previously washed), the tomatoes and the rocoto pepper (without seeds). Put all in a bowl.
Season with oil, salt, pepper and vinegar. When it gets served, add the parsley.
Note: You can use lime juice instead of vinegar and cilantro instead of parsley.
