Sopa a la minuta (Minuta-style soup)

I think a lot of peruvians, including us, remember the sopa a la minuta as a a delicious soup -especially in some cold days of the winter. It’s a traditional recipe that it’s still being prepared today, and includes milk, onion, garlic and beef. If you’re having a cold weather now, don’t wait: your family will love you (more!). It will take you only 15 minutes.

Ingredients:

  • 250 g (0.55 lb) of beef, cut in little pieces
  • 1/2 cup of evaporated milk
  • 100 g (3.50 oz) of thin noodles
  • 5 cups of boiling water
  • 1/2 onion, chopped in very little pieces
  • 1 clove of garlic, ground
  • 2 eggs
  • 1 teaspoon of oregano
  • 2 teaspoon of aji panca in paste
  • 3 tablespoon of vegetable oil
  • Salt
  • Pepper

Preparation:

Heat the oil in a pot and fry the onion, the garlic and the aji panca paste for some minutes. Add the beef until it gets brown.

Pour the boiling water and continue boiling, covered, on a medium flame.

Add the noodles and boil 3 minutes more. Pour slowly the eggs, slightly whipped, while you stir gently. Season with salt and pepper.

Before serve, add the evaporated milk and the oregano. Let it go down. Verify the salt level and serve.

Note: You can add yellow potato in square. Let us know what happened!

    Thank you for posting this recipe. It was very tasty. I made it for the first time for my friend (who is peruvian) and they loved it.
