Ajiaco de papas (Potato ajiaco)

The word ajiaco comes from ajÃ, the spicy ingredient of many peruvian dishes. There is a lot of ajiacos (potato, ulluco, caigua, etcetera). This one contains onions, garlic, yellow chili/pepper, paprika, fresh cheese and milk. It’s fast and not complicated - and it doesn’t have to be spicy if you don’t want. Give a surprise to your family with this recipe for 6 people.
Ingredients:
- 1/2 cup of vegetable oil
- 1 big onion, chopped
- 1 clove of garlic, chopped
- Yellow chili/pepper, to one’s taste
- 1 teaspoon of paprika
- 1 kg (2.2 lb) of white potatoes, peeled, cooked and cut in little pieces
- 3/4 cup of beef stock, or 3/4 cup of hot water with one beef bouillon cube
- 3/4 cup of fresh cheese, chopped
- 3 tablespoons of chopped parsley
- 1/2 cup of evaporated milk
- Salt
- Pepper
Preparation:
Heat the oil in a pot and brown the onion. Add the garlic, the yellow chili/pepper, the paprika, salt and pepper. Let it cook.
When it’s ready, add the potatoes and the stock. Let it boil some minutes. Finally, add the cheese, the parsley and the milk.
You can serve it with white rice. ¡Provecho!
