Alfajores de Manjarblanco (Manjarblanco Alfajores)

The alfajor (pl. alfajores) consist on two or more layers of baked pastry, in this case filled with manjarblanco, a caramel-colored, sweet cream made with milk and sugar (well, see the link). There is a lot of varieties, the recipe is not complicated and if you like the sweet desserts, you’ll be in heaven with this recipe for 60 little alfajores.
Ingredients:
- 2 cups of sifted flour
- 3/4 cup of margarine or butter
- Sugar, to one’s taste
- 4 tablespoons of powdered sugar
- Manjarblanco
Preparation:
Mix the butter, the flour and the sugar with a fork. Finish kneading with the hands; you must get an even pastry.
Over a floured surface, stretch the pastry with a rolling pin. Cut it in little circles, as cookies (you can choose the form and the size). Put all, carefully (you don’t want to break them), in a greased oven tray.
Take them to a preheated oven (350º F – 175º C) for 12 or 15 minutes.
Take out from the oven; let it cool down.
To fit the alfajores, take a cookie, put a little of manjarblanco and cover with another cookie (like a sandwich). Sprinkle with powdered sugar.
