Do you remember the Lima-style causa, or the causa rolls stuffed with crab? well, here you have another causa’s variety; this time, it will be stuffed with tuna. This is one of the most popular causa types (and one of the heathiests). You can prepare it with fresh or canned tuna; either of them is delicious. This recipe will make happy 6 people.
Ingredients:
- 1 kg (2.2 lb) of yellow potato
- 1/4 cup of vegetable oil
- 2 limes
- 1 tablespoon of yellow chili/pepper, blended or ground
- 1/2 kg (1 lb) of fresh tuna or 2 cans (180 g, 6 oz) of tuna in vegetable oil
- 1/2 red onion, chopped
- Tomatoes, cut in little squares
- 2 avocados
- 2 cups of mayonnaise
- Parsley, to decorate
- 8 black olives
- 2 hard-boiled eggs
- Optional: bell pepper stripes to decorate
- Salt
- Pepper
Preparation:
Cook the potatoes in water with salt. Peel and press them. Knead and season with salt, white pepper, lime, yellow chili/pepper and vegetable oil.
Mix the tuna with the mayonnaise and the chopped onion.
On a plastic sheet, spread the potato dough. Over the dough, put the tuna, tomatoes, avocado slices and roll it like a swiss roll.

Refrigerate for an hour. Remove the plastic sheet and put on a dish. Decorate with parsley, chopped olives, chopped hard-boiled eggs, avocado slices, and if you like a little of mayonnaise and pepper stripes.
Notes:
If you’re going to used canned tuna, you must season it with lime and chopped onion. If you use fresh tuna, bake it with salt and white pepper.
You can change the stuffing in this ways:
- Avocados, hard-boiled eggs, chopped tomatoes
- Avocados, chopped tomatoes, beets
- King prawn, mayonnaise, ketchup, some drops of lime juice, a little of ground yellow chili/pepper.
- In the upper photo, the olives, the avocado and tomatoes are cut in cubes asides. There are hard-boiled egg slices over the roll.

Causas and papas rellenas are delicious, versatile and so easy to make. Thanks for the recipes and variation suggestions. I too discovered that handling “potato dough” is easy when using plastic sheets like Glad Go Between freezer film. This website is great!
