Cebiche de champiñones (Mushrooms cebiche)

Although this salad has the same name of our traditional cebiche (fish cebiche), it’s not the same. We have to remember that the word cebiche comes from cebolla (onion) - and yes, you’re right: the only thing in common is the onion. Well, there’s another: both are delicious, tasty and healthy. This recipe will give you cebiche de champiñones for 6 to 8 people.
Ingredients:
- 2 kg (4 1/2 lb) of fresh mushrooms, cleaned and cut into sheets
- 3 cloves of garlic, finely chopped
- 1 medium onion cut into julianne
- 1 1/2 tablespoons of chopped parsley
- 1 1/2 tablespoons of chopped cilantro
- 3 limo chili/peppers, cleaned, without seeds and chopped
- Juice of 6 to 8 limes
- 3 tablespoons of olive oil
- Salt
- Pepper
Preparation:
Mix the mushrooms with the garlic, onion, limo, salt, pepper, parsley and cilantro.
Pour the lime juice and the olive oil. Mix and verify the season.
Serve over lettuce leaves and decorate with a slice of limo chili/pepper. Bon appetit!
