Humitas dulces (Sweet humitas)

The humitas are similar to tamales. Usually, the humitas are prepared smaller than tamales, but the sweet humitas don’t have meat or chili. They are… well, sweet (duh!). Its ingredients are less and they’re easier to get. The humitas are wrapped not in banana leaves, as the tamales, but in panca, the corn pod. With this recipe, you will get more or less 12 humitas. Come on, sweeten your day.
Ingredients:
- 8 tender corns
- 2 cups of evaporated milk
- 120 g (5 oz) of raisins
- 1 cup of sugar
- 4 tablespoons of margarine or butter
- 3 to 4 stick cinnamons
- Manjarblanco, to stuff the humitas
- Salt
- Corn pods, made soft in hot water
Preparation:
Remove the kernels from the corn (don’t trash the corn!). Blend the kernels with the milk. Melt the margarine in a pot and add the corn/milk mix, sugar, cinnamon, raisins and a pinch of salt.
Boil all on a medium flame, stiring constantly, until the mix gets thick and turns brilliant. Verify the season. Remove from the flame and let it cool down.
Spread a corn pod (remember to make it soft in hot water before) and put a tablespoon of the mix. Put a little of manjarblanco on top -in the center- and cover with another tablespoon of the mix. Cover all with another pod in transverse way; wrap and tie with pita fiber.
Now we’ll use the corns (you didn’t trash them, did you?): put them in a pot and cover with pods. Pour water to cover slightly the corns. Arrange the humitas in vertical sense, cover with more pods and close the pot.
Boil for 30 minutes. ¡Listo!
