Arroz chaufa (Chaufa rice)
May 29th, 2008 by Diego

The Chaufa rice is one of the Chifa main dishes. The Chifa is the delicious result of mixing the peruvian and chinese food; it’s so popular that you can easily find a Chifa restaurant almost in each neighbourhood in Lima. Of course, the Chaufa rice has a lot of variations (yes, we’ll have it here at Peru-Recipes.com too). We’ll see more of Chifa recipes later, but now it’s important to start here. Come on, it’s easy and tasty.
Ingredients:
- 1 kg (2.2 lb) of cooked rice
- 250 g (9 oz) of boiled pork
- 250 g (9 oz) of boiled chicken
- A omelette made with 3 eggs
- 3 tablespoons of chopped shallots
- 1 tablespoon of chopped ginger
- 1/2 cup of soy sauce
- Vegetable oil
Preparation:
Heat the oil and fry the meats and the ginger. Add the shallots, season and mix with the omelette, cut in pieces.
Add this mix to the rice with the soy sauce. Ready!
