You didn’t thought to find a pilaf made of quinoa, did you? why do we use the quinoa? well, as we saw in a previous post, this is an excellent, nutritional, food used by the Incas. This pilaf is one of the healthiest ways to prepare it; contains olive oil, chicken stock, carrots, parmesan… and it has only 199 calories – you can’t lose it!. This recipe is for 8 people.

Ingredients:

  • 1 1/2 cup of quinoa
  • 3 cups of chicken stock
  • 1 1/2 tablespoon of vegetable oil
  • 1 1/2 tablespoon of olive oil
  • 1/2 cup of green bell pepper, cut in little pieces
  • 2 cups of carrots, peeled and cut in little pieces
  • 1/2 cup of red bell pepper, cut in little pieces
  • 3 shallot heads, chopped (green and white parts)
  • 2 celeries, chopped in little pieces
  • 1/2 cup of chopped parsley
  • 1 clove of garlic, chopped
  • 2 to 3 tablespoons of parmesan cheese, grated
  • Salt
  • Pepper

Preparation:

Wash the quinoa. See the link of Quinoa.

Boil the stock and add the quinoa. Cook 15 minutes, strain and keep back.

Pour the oils in a big frying pan and make a sauté with the peppers, carrots, shallots, celery and parsley on a high flame for 7-8 minutes. Add the garlic and cook 1 more minute. Season.

Add all this to the quinoa and stir with a big fork. Season with parmesan, salt and pepper.

    Isn’t that pilaf also made with a hard white smoked goat’s milk cheese that’s covered in ashes instead of grated Parmesan cheese?
