Cau cau de mariscos (Seafood cau cau)

Do you remember the creole cau cau recipe? if you have liked it, you’ll love the seafood cau cau. Its preparation is similar and the taste is delicious (and it’s healthier!). You can combine all the seafood that you want: king prawns, squids, octopuses, clams… if you want, the dish that you eat today can be totally different to the next one. This recipe is for 8 to 10 people.
Ingredients:
- 1 kg (2.2 lb) of cooked seafood (as we said, clams, prawns, king prawns, octopuses, squids, snails, etc)
- 5 cups of fish stock (prepared with celery, 1/2 onion and parsley)
- 2 fillets of white fish
- Flour
- Vegetable oil
- 2 tablespoons of Mirasol chili/pepper in paste (see the link)
- 2 teaspoons of ground garlic
- 4 onions, finely chopped
- Salt
- Pepper
- Cumin
- 6 white potatoes, peeled and cut in little cubes
- Mint, finely chopped
Preparation:
Cut the fillet in little pieces and flour them. Heat oil in a frying pan and fry the fish. Remove from the flame and keep back.
Fry the prawns’ tails. Remove from the flame and keep back.
Fry the chopped onion in 1/2 cup of vegetable oil. Add the garlic and the Mirasol. Mix well and season with salt, pepper and cumin. Add the seafood with a little of fish stock and cook for some minutes.
Mix with the potatoes and let it cook. Add the prawns’ tails and the fried fish. Verify the season.
Serve and sprinkle chopped mint.
