Causa de beterraga rellena con pollo y palta (Beet causa stuffed with chicken and avocado)

The causa can have infinite variations. We’ve already seen the tuna causa, the Lima-style causa, and even a causa rolls stuffed with crab. Peru has a lot of versions of the potato, and most of them let us to prepare more and more different dishes. But we have today a colorful kind of causa, and we get it using beet. How? let’s prepare it. This recipe is for 6 people.

Ingredients:

For the causa:

  • 1 kg (2.2 lb) of yellow potato
  • Juice of 2 limes (more or less)
  • Yellow chili/pepper, ground, to one’s taste
  • 1/4 cup of vegetable oil
  • 1 medium beet
  • Salt
  • Pepper

For the stuffing:

  • 3 fillets of chicken breast, cooked and shredded
  • Mayonnaise
  • 2 avocados, peeled and cut in slices
  • 4 hard-boiled eggs, peeled and cut in slices
  • Slices of pepper, to decorate

Preparation:

Causa:

Put the potatoes in a pot and covered with water and salt. Boil on a medium flame until they get ready. Remove from the flame, and being still hot, peel and press to get a puree. Let it cool down for some minutes and knead. Season with salt, white pepper, lime juice, ground chili/pepper and vegetable oil to one’s taste. This is the “original” causa.

Put the beet in a pot and cook it in water. When it’s ready, peel and cut it in pieces. Blend it with little of water (as minimum as possible) to get a puree.

Mix this puree with the causa until you get the color that you want. Use a small tin to mold this mix if you’re going to serve in individual plates. Press the causas forming levels (see the photo).

Stuffing:

When you have the first level of causa, spread it with mayonnaise and cover with avocado and egg slices. Sprinkle a little of salt, spread a little more of mayonnaise and add the second causa level – press softly!. Mix a little of chicken with mayonnaise and put over the causa. Cover with another causa level.

Carefully, remove the tin and decorate with chicken, pepper slices and parsley. Next to the portion you can decorate it too, using avocado slices and lettuce leaves.
