Sopa de pallares (Lima beans soup)

As you can see in Wikipedia, the lima beans or butter beans are known in spanish as pallares (plural of pallar). It’s an andean legume used in a lot of dishes in the peruvian cuisine. One of its most delicious recipes is this, a soup with bacon and parmesan cheese. Yes, it sounds great - wait to taste it. This recipe is for 6 to 8 people.
Ingredients:
- 400 g (14 oz) of Lima beans
- Bacon, to one’s taste
- 3.5 liters of water
- 4 tablespoons of vegetable oil
- 2 chopped leeks
- 3 ground garlics
- 3 sticks of celery, finely chopped
- 1 medium carrot, cooked and peeled, chopped in little cubes
- 1/2 cup of grated parmesan cheese
- Oregano (chopped), to one’s taste
- Salt
- Pepper
Preparation:
Soak the Lima beans in water since the day before. Peel and cook them in boiling water with the bacon. When it’s ready, save and chop the bacon. Blend the Lima beans.
Heat the oil in a pot and fry the leek, celery, garlic, salt, pepper and the used bacon. Add the Lima beans and boil some minutes before serving.
When it’s served, add the little cubes of carrot, the parmesan cheese and the oregano.
