Alfajores de camote (Sweet potato alfajores)

If you have come to Peru and have tried the manjarblanco alfajores (or if you prepared it), you’ll know how tasty it is. Well, for this weekend we have a variation: the sweet potato alfajores. It hasn’t manjarblanco, but a delicious stuffing made with sweet potato, egg yolks and sweet wine. Don’t lose it, it’s easy! this recipe is for 6 people.

Ingredients:

Cookies:

  • 300 g (11 oz) of flour
  • 200 g (7 oz) of corn starch
  • 6 tablespoons of butter
  • 2 egg yolks
  • 1/2 cup of fresh milk
  • 3 tablespoons of powdered sugar

Stuffing:

  • 1 kg (2.2 lb) of sweet potatoes
  • 3 egg yolks
  • 1/2 kg (1 lb) of sugar
  • 3/4 of sweet wine

Preparation:

Cookies:

Sift the flour with the starch and mix with the butter using a fork. Make a space in the middle, add the yolks, milk and powdered sugar. Knead. Stretch, cut in circles and put them in a greased tin. Bake to 160º C (320º F) for 20 minutes.

Stuffing:

Cook the sweet potatoes, peel and blend them. In a pot, mix it with the beaten yolks and the sugar. Wait for some minutes, pour the wine and cook 3 minutes more.

Spread a cookie generously with the stuffing and cover with another cookie. You can roll the sides by ground soda cookies. Serve.
