The rice is very important in Peru… not only in our main courses, but in desserts too (did you already prepare the arroz con leche (pudding rice? it’s not the same than this, and if you didn’t, you must try it). This pudding contains apricots, eggs, grated lime rind and, of course, rice and vanilla. All your family will love this dessert. The recipe is for 8 people.

Ingredients:

  • 1 lt (4 cups) of fresh milk
  • 1 cup of rice
  • 2 teaspoons of vanilla
  • 1 cup of apricots, without seeds
  • 1 cup of sugar
  • 1/4 cup of butter
  • 4 eggs
  • Grated lime rind (1/2 lime)
  • Salt

Preparation:

Heat the milk. When it’s boiling, add the rice with a pinch of salt and the vanilla, and cook for 2 minutes. Remove and cook this mix in a double boiler until the rice gets ready, more or less 40 minutes, stiring constantly. Let it cool down for one hour.

In a pot, cook the apricots in a cup of water for 5 minutes. Add 1/4 cup of sugar and continue cooking for 5 minutes more. Keep back.

Preheat the oven to 180º C (356º F).

Beat the butter with the rest of sugar and the yolks until it gets creamy. Add the rice and and the grated lime rind. Beat the whites to form peaks with a pinch of salt. Add this mix to the previous preparation, mixing well.

Pour all in a greased pyrex and bake 30 minutes. When it’s ready, cover with the apricots and its honey and bake 10 minutes more.

Serve lukewarm or cold.
