The peruvian mayonnaise doesn’t have the same taste than the packed ones. If you use fresh ingredients (including fresh limes), you’ll get an amazing mayonnaise, with a special flavour that will be a great accompaniment with a lot of your dishes. With this recipe, you’ll get one cup of mayonnaise, more or less.

Ingredients:

  • 1 egg
  • 1/2 teaspoon of mustard
  • 1/2 teaspoon of salt
  • 2 teaspoons of lime juice
  • 1 cup of vegetable oil
  • Pepper

Preparation:

Put all the ingredients, except the oil, in a blender. Blend in a medium speed and add the oil gradually until the mayonnaise gets thick. Verify the season.

    Hi,

    I’m Peruvian. At home, I used to put all the ingredients into the blender, except: oil and lime juice. The oil is added gradually to get the characteristic consistency of the mayo till you are happy with the result. And just at the end, I add the lime juice to give it the “Peruvian touch”. Otherwise, the mayo is ruined.
