
Lima beans, butter beans… it has a lot of names, and it doens’t matter: the only important thing is it’s delicious (have you tried the Lima beans soup?). Did you think that there was an unique type of puree? ok, you’ll be pleasantly surprised with this new kind. You won’t need a lot of ingredients and its preparation is easy and fast. This recipe is for 6 to 8 people.
Ingredients:
- 1 kg (2.2 lb) of Lima beans
- 1/2 cup of butter
- Salt
- Pepper
Preparation:
You don’t need to soak the Lima beans previously. Wash and put them in a big pot, covered by water. When it boils, wait 5 minutes or until the peel gets detached easily. Strain and peel them. Cover them with water again and return to the flame until they get cooked and soft.
Strain and blend with a little of the boiled water. Drain it through a fine colander and mix with the butter. The puree must be creamy and soft.
Season with salt and pepper.
