Sour cherry liquor (Licor de guindas)

Sometimes the good things aren’t immediate and take their time. This is the case of the sour cherry liquor: we have to let the nature make its job, waiting for a month to get an excellent drink. You’ll only need a good pisco, ground cloves, powdered cinnamon, sour cherries (of course) and… patience. If there is some special date approaching, you’re in time to celebrate it with this delicious liquor.

Ingredients:

  • 1/2 kg (1 lb) of sour cherries
  • 1 1/2 cups of sugar covered with water
  • 1 bottle of a good pisco
  • 1/8 teaspoon of powdered cinnamon
  • 1/8 teaspoon of ground cloves

Preparation:

Wash well the cherries and soak in water for an hour. Take the half of the cherries and remove their seeds. Ground them. Don’t touch the other half.

Put the sugar in a pot and make a syrup. Remove from the flame and add the cherries. Let it cool down.

Mix with the pisco, cinnamon and cloves. Macerate for 1 month in a wide-mouth bottle. It has to be hermetically sealed. Shake the bottle occasionally.

When the month has finished, filter the liquor with a synthetic fabric.
