Tallarines en salsa de espinacas (Spaguettis with spinach sauce)

This is the second type of tallarines verdes (”green spaguettis”) in Peru (well, in fact there are a lot of versions in every peruvian region). Do you remember the spaguettis with basil sauce? they’re the first type. This time, we’ll use walnuts, pork, onions and, of course, spinach. This recipe is for 3-4 people. Enjoy!

Ingredients:

  • 1/2 kg (1 lb) of cooked spaguettis
  • 2 tablespoons of vegetable oil
  • 1/2 cup of chopped onion
  • 4 bunches of spinach, cooked
  • 100 g (3 1/2 oz) of peeled walnuts
  • 1 cup of ground pork
  • Parmesan cheese
  • Salt
  • Pepper

Preparation:

Fry the onion and add the pork. Season and cook well.

Blend the spinach and walnuts. Add this mix to the pork and let it boil a little.

Mix this sauce with the spaguettis and sprinkle parmesan cheese. Serve immediately.
