Albóndigas (Meatballs)

There is a lot of ways to prepare the meatballs: with tomatoes, with pasta, with mushrooms, baked, fried and ad infinitum. Today we’ll see the peruvian way, with yellow/chili pepper, parsley, bread, olives (although it’s better if I say “one of the peruvian ways”!). With this recipe, you’ll get enough meatballs for 6 people (or 3 if you’re very hungry ;) ).

Ingredients:

  • 3 tablespoons of vegetable oil
  • 1 medium onion, chopped
  • 1 big tomato, peeled and chopped
  • 1 yellow chili/pepper, cut in little pieces
  • 1 tablespoon of chopped parsley
  • 1/2 kg (1 lb) of ground beef
  • 1/2 teaspoon of chopped garlics
  • 3 slices of bread, soaked in water and drained
  • 2 eggs, mixed
  • 2 tablespoons of raisins
  • 6 black olives, chopped
  • Flour
  • 2/3 cup of beef stock
  • Salt
  • Pepper

Preparation:

Heat the oil in a pot and fry the onion, tomato, yellow chili/pepper and season. When it’s ready, mix in a bowl 1/3 of this seasoning with the meat. Add the garlics, bread, eggs, raisins, olives and mix again. Season to one’s taste.

Make the beatballs with your hands. You decide the size. Flour them.

Add the beef stock to the rest of the seasoning and boil. When it starts to boil, add the meatballs and let it boil on a low flame until they get cooked.

Serve with white rice.
