Chicharrón de calamar (Squid chicharron)

This is another excellent recipe for seafood. Maybe you remember the fish chicharron recipe; there we explained that the chicharron is a dish consisting in deep fried meat; in this case, squids. Usually it’s served with tartar sauce in any cebicheria (the restaurants where the fish cebiche is sold). You can use it as an entrée or an appetizer. With this recipe, you’ll get squid chicharron for 6 people.

Ingredients:

  • 12 to 14 medium squids
  • Flour
  • Vegetable oil
  • Pepper
  • Salt

Preparation:

Wash the squids. Cut them in rings and season with salt and pepper.

Flour and fry them in a lot of oil until they get browned and crispy. Tip: fry the squids in little groups; the oil mustn’t get cooled down. Wait until the oil gets very hot before frying.

Strain and put them in a paper towel to remove the grease. Serve with tartar sauce and a lime cut in 4 parts.

Tartar sauce: Prepare mayonnaise and add finely chopped parsley, shallot, caper and gherkin.

Notes: some people mix the squids with ground garlic before frying and let it marinade for some hours in the refrigerator.
