Huevo chimbo (Chimbo egg)

The word chimbo refers to a kind of dessert made with eggs, syrup and almonds. The huevo chimbo is a traditional rich egg-based dessert, made with egg whites, butter, cinnamon, cloves and decorated with almonds. Does it sound good? it’ll be better when you try it. This recipe is for 10 people.

Ingredients:

  • 21 egg whites
  • 1 tablespoon of butter
  • 1 kg (2.2 lb) of sugar
  • 3 cups of water
  • 2 big stick cinnamons
  • 6 cloves
  • Almonds for decoration

Preparation:

Beat the whites to form peaks. Grease an ovenproof dish (15 x 15 cm, more or less 6 x 6 inches) with the butter and pour the whites. Bake 25 minutes to 170 ºC (340 ºF).

Take the sugar and water and prepare a syrup. Add the cinnamon and cloves to get the aroma enhanced.

Remove the dish from the oven and let it cool down. Cut the preparation in squares and put them in the syrup. Boil the portions on a low flame for 10 minutes.

When they’re ready, serve in a dish with a little of the syrup. Decorate with almonds and small candies.

    Wow, this sounds amazing! I’m gonna have to cut the recipe in half, cause hey, 21 egg whites leave you with 21 egg yolks… And what the heck do you do with 21 egg yolks! ha ha ha. I’ll put this on my “to do” list right now! Thanks!

    salut moi c’ est hacene chimbo d’algerie , le dessert est delicieu , mais je veut aussi savoir , pourquoi est appeler (chimbo oeuf) moi je fait une recherche sur les origines de ce nom car , c’est mon nom de famille. A BIENTOT.

    With 21 yolks you can make beautiful custards, YOU CAN FREEZE THEM, make insanely decadent french bread: look up the recipe for creme anglaise.
    4 egg yolks
    1/2 C sugar
    pinch of salt
    2t c vanilla extract
    1C heavy cream
    Don’t be afraid to use just white there is a world of stuff to do with the yolks
    (the above was my favorite to make when i was the cook for a bed and breakfast)
