Papas con queso (Potatoes with cheese)

It’s curious: in the land where the potato was born, we have been prefering the rice as the main accompaniment. Well, things are changing due the rise of the rice price (rhyme!) and the peruvian government has begun a campaign to promote the consume of potatos (“Papea Perú”) in the International Year of the Potato. Oh, the recipe! you’ll enjoy this fabulous dish for 4 people.
Ingredients:
- 1/2 kg (1 lb) of white potatoes
- 4 tablespoons of parmesan cheese
- 3 tablespoons of gruyere cheese
- 1/2 cup of flour
- 2 eggs
- Vegetable oil
- Salt
Preparation:
Wash well the potatoes and cook them in salted water. When they’re ready, peel and press them. Then mix it with the parmesan and gruyere (previously grated). Knead well.
With the dough, make little balls and flour them. Soak in beaten egg and flour them again.
When they’re completely dry, fry them. When you’re going to serve, sprinkle with salt.
Note: Some people fry the little balls in lard.
