Manjar de almendras (Almonds delicacy)
Nov 6th, 2008 by Diego

This isn’t a version of the manjarblanco. The manjar de almendras is a traditional and ancient dessert, born in the peruvian colonial age. You can still find some of this delicious dishes in some old convents. Pay attention: A group of almonds are not ground well, so you can taste them. This recipe is for 8 people.
Ingredients:
- 3 1/2 cups of sugar
- 1 1/2 cups of water
- 4 cups of peeled and ground almonds
- 6 cups of milk
- Powdered cinnamon
- Small candies
Preparation:
Prepare a syrup with the sugar and the water. When it’s ready, add 1.5 cups of almonds (well ground) and 3 cups of milk. Boil and when you’ll get a syrup again; add the other 3 cups of almonds (in a little bigger pieces) and mix with the rest of the milk. When its consistence gets creamy (as the manjarblanco), remove from the flame and serve in glasses. Sprinkle powdered cinnamon and small candies to decorate.
