Papas ahuecadas con queso y ajà (Potatoes stuffed with cheese and chili pepper)

Yes, the name is similar, but this recipe is totatlly different to the stuffed potatoes recipe: you wont have to knead the press potatoes, but make them a hole to fill it with a delicious stuffing. This is a traditional but very simple recipe, enough for 6 people. Enjoy it.
Ingredients:
- 6 medium potatoes
- 2 egg yolks
- 1 cup of grated fresh cheese
- 2 tablespoons of yellow chili/pepper sauce
- 3 tablespoons of chopped parsley
- 2 tablespoons of butter
- Salt
- Pepper
Preparation:
Cook the peeled potatoes in water with salt. Remove from the water and when they’re cold, make a hole in each one using a teaspoon. Don’t waste the extracted potato: press and mix it with the yolks, cheese, sauce, parsley, salt and pepper.
Stuff the potatoes with this mix and spread the butter on them. Bake in a warm oven (165º C, 325º F) for 20 minutes. After finishing this time, heat the oven (200º C = 400º F) and cook for 10 minutes more. Ready!
