Torta de quinua (Quinoa cake)

We’ve talked before about the quinoa, one of the best foods in the world due its nutritional value. This time we’ll use it to prepare a very good –and simple- cake. Remember to wash the quinoa well, rubbing it in your hands. You must change the water until it gets clear. Then we boil the quinoa in water (3 measures of water and 1 of quinoa) and strain when it’s ready. The autor of this recipe is Mme. Antonia Nadal de Garmendia (1876). You’ll obtain enough cake for 6 people.
Ingredients:
- 1 kg (2.2 lb) of quinoa
- 12 eggs
- 1 tablespoon of butter
- 1 tablespoon of powdered sugar
- Syrup (see below)
Preparation:
Wash well the quinoa; cook it and strain.
Beat the eggs and add them to the quinoa. Add the butter and the powdered sugar. When all is mixed, pour the mix in a dish and bake it for 20 minutes. When it’s ready, cut it in 4 pieces and pour the syrup in the cuts. Bake again for 10 minutes to 180º C (350º F) and serve.
Note: You can prepare the syrup boiling a cup of sugar with 1/2 cup of water. It must get sticky and then you can add some liquor, if the recipe calls for it.
