Do you remember the cassava and cheese pies? if you liked it, you’ll love this northern pies. They’re prepared with gruyère and parmensan cheese and combined with a northern chili/pepper sauce (don’t worry, you’ll find both recipes below). This recipe is for 8 people.

Ingredients:

Pastry:

  • 1/2 kg (1 lb) of wheat flour
  • 10 tablespoons of butter
  • 1 egg
  • 1/2 cup of water
  • Salt

Stuffing:

  • 4 eggs
  • 100 g (3.5 oz) of gruyère
  • 1 tablespoon of fresh milk
  • 1 tablespoon of butter
  • 1 tablespoon of parmesan
  • Juice of one lime
  • Nutmeg
  • 350 g (12 oz) of sausage

Preparation:

To prepare the pastry, put the flour over a table (keep back a little to sprinkle while you work it), mix with butter and egg and knead very well for 20 minutes. Little by little add a little of water with salt and continue kneading. You’ll know it’s ready when the pastry doesn’t stick to the table or your hands. Form circles and pass a rolling pin.

For the stuffing, prepare 4 hard-boiled eggs. Peel and chop them and mix in a bowl with the gruyère, milk, butter, parmesan, lime juice, a pinch of nutmeg and the chopped sausage.

Put this stuffing on every circle and form the pie, pressing the union with a fork. Bake the pies in a warm oven (180º C, 350º F) for 25 minutes. If you want, you can brush them with egg yolk and beaten cream before get them into the oven. Serve with northern chili/pepper sauce.

A simple northern chili/pepper sauce: Mix very well the following: one chopped onion, one chopped yellow/chili pepper, one cup of chopped and fried Parma ham, two tablespoons of chopped cilantro, three chopped tomatoes, salt, pepper and vegetable oil.
