The word olluquito is the diminutive of olluco. Maybe it’s called in this way because the ulluco is cut into julianne and it seems to be smaller. This andean root is very popular in Peru, where is eaten also with charqui, llama jerky. Preparing this recipe you’ll get olluquito con carne for 6 people.

Ingredients:

  • 1 kg (2.2 lb) of ulluco, cut into julianne
  • 4 tablespoons of vegetable oil
  • 250 g (1/2 lb) of beef, chopped
  • 1/2 cup of chopped onion
  • 3 cloves of garlic, chopped
  • 1 teaspoon of oregano
  • 1 teaspoon of cumin
  • 2 tablespoons of aji panca in paste
  • 2 tablespoons of chopped parsley
  • 1 teaspoon of paprika
  • Salt

Preparation:

When the ullucos are cut, soak in water with salt for one hour.

Heat the oil in a frying pan and fry the beef until it gets ready. Keep back.

In the same oil, fry the onion and the garlic until this gets clear. Add the paprika, aji panca, cumin, oregano and salt. Let it cook for some minutes.

Drain the ullucos and add them to the frying pan with the beef. Cover it and cook on a low flame until the ulluco gets soft, more or less 15-20 minutes. Stir occasionally. Add the parsley and mix.

Serve with rice.
