PERU-RECIPES.COM is a blog dedicated to disseminate one of the world’s best cuisines: the peruvian. Here you will find soups, salads, starters, main courses, desserts, liquors…
“Peruvian cuisine is considered one of the most diverse in the world. In January 2004, The Economist said that “Peru can lay claim to one of the world’s dozen or so great cuisines”, while at the Fourth International Summit of Gastronomy Madrid Fusión 2006, regarded as the world’s most important gastronomic forum, held in Spain between January 17 and 19, Lima was declared the “Gastronomic Capital of the Americas”.
Thanks to its pre-Inca and Inca heritage and to Spanish, Basque, African, Sino-Cantonese, Japanese and finally Italian, French and British immigration (mainly throughout the 19th century), Peruvian cuisine combines the flavors of four continents. With the eclectic variety of traditional dishes, the Peruvian culinary arts are in constant evolution, and impossible to list in their entirety. Suffice it to mention that along the Peruvian coast alone there are more than two thousand different types of soups, and that there are more than 250 traditional desserts” (Wikipedia).

I am an American who married a Peruvian man from Lima. I LOVE Peruivan food and I am soooo happy to find your Website. I have enjoyed exploring and cooking Peruvian food for 5 years now. My husband, his family and friends have been very supportive and helpful. I would love to know if you could print a recipe for Tallarin Verde.
Erin,
Of course! you’ll have it this week.
Good luck!
Hi Diego,
I was thrilled to find your blog! My mom is Peruvian, and my sister and I are trying to preserve the cooking traditions in our family. Do you have the recipe for pastel de coliflor? My mom can’t remember the recipe, and of course, she never wrote anything down.
Thank you,
Lisette
Lisette,
I’ll try to get it! I hope to have it this week.
Greetings!
Hi Diego,
Thanks for getting the pastel de coliflor recipe posted so quickly! Do you have a newsletter?
Thanks again!
Lisette
Lisette,
Not yet, but you can follow the blog via RSS for now. It’s not a bad idea…
Good luck!
If you ever need a webhost, I’d love to sponsor it. I fell in love with a Peruvian while living in Lima, and I love this website as it has great foods I can make her to help her feel more at home here in Oklahoma. Anyway, so let me know if I can be of assistance if the bill gets to be a pain.
Salud.
DG

Have you ever heard of Te Macho? (not sure of the spelling). I recently hiked the Inca Trail and we were served this delicious warm drink one evening. It consisted, I believe, of dark peruvian rum, sugar, cinnamon, and mandarina (tangerine) juice.
I’ve been looking around the Internet for the recipe but have come up short so far!
How,
I’ll try to get it!
Good luck!
Hello Diego,
I’ve enjoyed reading much of your blog. I lived in Lima a long, long time ago and many of your recipes are making me nostalgic for that time. I remember we often ate rice with lentils topped with a fried egg, aji and limon. Do you have a recipe for this? It seems simple enough to recreate, but just isn’t the same as I remember. Maybe it’s the lack of true aji and limon or that I’m not in Lima!
I’m looking forward to making some of your recipes!
Thank you,
Lisbeth
Hi Diego,
I am in love with my peruvian heritage and the cuisine. I was looking for different condiments, specifically ajis, that are served with meals. In particular an aji amarillo with garlic, that served with the basic meals, kind of like the green aji that’s served with lomo saltado. Can you help with some direction or post the recipe please?
Maria,
Do you mean the yellow chili/pepper sauce? you can find the recipe here.
Good luck!
Diego,
Thank you so much for sharing all these wonderful recipes. They are delicious. My friend Christina’s mother is Peruvian and we’ve been cooking many of these recipes together and rediscovering her Peruvian culture. She almost cried one day because she said the smells reminded her of her grandparents’ kitchen. Thank you again! Please post more if you get some time.
hi diego,
Love your blog, Im living in Italy and I’m cooking many of the Peruvian dishes my mother used to make back in New York. Your blog has so many interesting dishes some which are very inventive. I’m looking for the recipe of the clasic “Aji para pollo alla brasa”. I just love that stuff even on bread.
Hola Diego, me encantó encontrar tu blog… y por supuesto tu slogan es el mejor “because if it’s peruvian, is delicious”, WONDERFUL!. Estas haciendo camino, Felicitaciones
